Don’t let the color fool you, Bancha is a green tea, picked after Sencha, and considered by some to be a lower quality tea. Don’t be swayed before you try this rare batch leaf.

You’ll find similar notes to a good quality aged Sheng Puer, balancing fruit, minerality and funk in a wonderfully approachable cup.

This particular style of Bancha from Asahimachi Birudan of Toyama Prefecture goes as far back to the 15th century, and is consumed in a traditional way of being simmered for nearly an hour before being whisked to a gentle froth with a pinch of salt. However, don’t be shy to try steeping it in the more modern, conventional way: 5 grams of tea in 200ml of water at 170 F water for 2-5 minutes.
