Find here an extraordinary leaf from Ehime prefecture, called “Ishizuchi Kurocha”,or the Black Tea of Ishuzuchi. This is a rare find even today, and like is not seen outside of this particular region.
This tea is double fermented to cultivate non-harmful white molds, and brewed in an unconventional manner: add 1.5 grams of tea leaf to a full liter of filtered water, and simmer for a full ten minutes. The brew that comes forth will be unlike anything you’ve tasted in a tea; richer than if just steeped conventionally, and with exquisite warm and sour notes.
